Bonjour Madame

Estelle & Florent, started in 2016 in La Paz by selling their pastries at the farmers’ markets around La Paz, learning about the communities of Baja. In 2018, they finally choose Todos Santos and 3 years later Béranger alias “Berni” came in as a partner - bringing more savory delights to Estelle's pastry, while Florent welcomed you at the shop.

The 3 of us grown up around Paris. Estelle & Florent were friends when they were teenagers, living in Versailles, the city of the last great king of France and the memory of Marie-Antoinette. Their family roots come from the east part of France for Florent in the continental climate of the Vosges. At the opposite Estelle’s family is from Normandie, by the channel influence, providing great sea food, delicious cheese and Calvados, apple licor.  

Berni’s Family settles in the atlantic coast : in Oleron island, sea-food specialities ans Cognac area.

How we started our Cafe,

Bonjour Madame

As the covid pandemic slowed down the farmers markets,  it was time to settle down somewhere. We picked Todos Santos, for its smooth climate, the cosmopolitan community, and its situation halfway between La Paz and Los Cabos.

 We first started into a food court in the historic part of the village but then we discovered that cute little place of Plaza Victoria in the booming area of Las Tunas. Just a  bit off the road and close to the beach this cute hidden yard with its arcades seemed the perfect spot to start our new business.

Meet Estelle

BONJOUR!

Estelle was born in the family of the greatest pastry chef of his generation; Gaston Lenôtre. As a passionate entrepreneur, he took his whole family in his project, whose Estelle’s parents. She had a precocious education about good products and gastronomic restaurants. She loves to share and teach her passion for food and so for people who dedicate their life in providing good products. After many years of her career in the commercial part of business, she felt the need to enter the productive part. Therefore she spent months in the prestigious Lenôtre international professional school nearby Paris before coming to Mexico.

Florent, as Estelle’s best friend as kids, used to share tasty moments in her family on many festive occasions and on summer jobs at Lenotre’s boutique, managed by Estelle’s mother. Florent spent years honing his craft in his own creperie in Britany before deciding to embark on a new adventure in Todos Santos with Estelle.

Meet Bernie

Berni left France very young but always remembers his roots, cooking as his mother taught him how to cook sausages, pâtés, terrines and stews. Over the years, Berni has honed his skills and developed a deep understanding of the art of french cuisine. He carefully uses a blend of French traditional and modern techniques to create his delicious meats. Berni’s dedication to his craft is evident in every aspect of his work, from his attention to detail in selecting ingredients to the beautiful presentation of his food in the shop. His love for what he does is contagious. Those are the reasons Estelle and Florent, proposed him to join their project to complete the range…
